How to make the perfect Aperol Spritz

I never actually tried an Aperol Spritz until I went to Italy. Of course I’d seen them alll over Instagram but ironically, I hate the color orange and assumed they were sweet AF which I hate. Anyway, I was in Positano at a beach club and saw everybody drinking them and thought they had to be decent. One sip and I was hooked(the Italians know how to do everything right). For the next six days I basically was just blissed out on the beach in the sun enjoying these orange goblets of deliciousness.

Now, every time I have one, I’m mentally teleported to a beach club in Capri- sun beating down on me with the scent of lemons in the air. In all seriousness though I love these drinks because they really don’t get you drunk. They’re perfect to drink during the day or when you go out if you just want something really light. In Italy, they drink them before dinner as an aperitivo to open your palate before your meal.


These are really easy to make but the key to a perfect spritz is not putting too much Aperol in it. Aperol is equally as tart as it is sweet and I really don’t like anything sugary in my drinks so the key is to really only put a little bit of it in. When I go out to a restaurant I micromanage the bartender as always and ask only for a splash because if not, they will fill the glass with Aperol and it tastes like you’re drinking some sort of syrup.

What you need:

  • Prosecco (I like Nino Franco but any will do)
  • Aperol
  • Club Soda (I like San Pelegrino to keep it Italian but any non-flavored will do)
  • Ice

How to make an Aperol Spritz:

  • Fill a large wine glass with a f*ck ton of ice
  • Pour 3/4 of the glass with prosecco
  • Pour Aperol into the cap and pour a cap-full into the glass (this is KEY so you are controlling the amount of Aperol, usually a cap and a half is perfect but alter to your preferences)
  • Top off with club soda
  • If you’re feelin fancy, add an orange slice
